•     1515 implements sustainable practices through our “Green Initiative”, which includes using local products, composting, recycling, water and electrical saving devices, etc.  1515 Restaurant is one of the first restaurants to be certified as an "Environmental Achievement for Restaurants" by the Denver Department of Environmental Health as "Certifiably Green Denver" partner and Gold Level Achievement with Colorado Environmental Health in Environmental Leadership Program.
•     We were the first restaurant in Denver to be certified for ‘Sous Vide’ cooking. Sous Vide is French for ‘Under Pressure’—a slow cooking process that involves vacuum sealing the food then placing it in 127 degrees Fahrenheit water for 10 hours to enhance the protein, guaranteeing the meat always comes out tender and juicy.
•     We will work around the dietary needs for vegetarians, vegans and celiacs!
•     1515 has been awarded Wine Spectator’s “Award of Excellence” for the past 10 years with the distinction of "great value" wine list. There is always an in-house Sommelier to help pair any of our 500 plus wines with our seasonally changing menu.
