Attilus - which means "great sturgeon" in latin - is dedicated to raising the world's finest sturgeon in a sustainable and ecologically-friendly manner.

Our state-of-the-art aquaculture facility is situated in the wide expanse of the Saxony-Anhalt region of Germany, where we've been farming Russian and Siberian sturgeon since 2008.

Our philosophy is simple: just as the quality of champagne begins in the vines, so the health and well-being of our fish determines the quality of our caviar.

Our team of experts produce a completely sustainable, fully traceable caviar for gourmet chefs and connoisseurs. Between them, they have decades of experience in sturgeon husbandry and caviar making. Highly qualified researchers and biologists carefully monitor our fish around-the-clock, meticulously calibrating their feeding plans to provide the perfect nutritional balance through each and every step of the sturgeon rearing process.

All our products are sustainably produced and our caviar is certified by CITES (the Convention on International Trade in Endangered Species of Wild Fauna and Flora).

You may also be interested to know that the official seal included at the bottom of each label (an oval shape with the code ST00077 inside it) ensures that our fish’s welfare has been supervised by state veterinary controls according to European law.

Royal Siberian Caviar, sometimes called baerii caviar, is produced by Siberian sturgeon (acipenser baerii). Siberian is a fine-grained caviar recognised for its pure, elegant flavour and exquisite length which is both fine and clear. Colours range from black/grey all the way to black/brown tones.

Royal Oscietra Caviar from the Russian sturgeon (acipenser gueldenstadtii) is renowned for its excellent egg quality. The medium-sized grain of this caviar has a slightly nutty flavour with a mellow length that lingers beautifully on the palate. Colours may range from dark grey and dark olive green to golden brown tones.
