Fathom Cellars is the only hyperbaric wine aging service in the US that is open to the public. Founded in 2017, and based in Sacramento, our pilot plant is the first of its kind to use our patent process to age wine ~10 times faster. To accelerate maturation we utilize the natural effect of extreme high pressure, low oxygen, and low temperatures. Because the TTB has banned resale of wine bottles that have come in contact with untreated water, this process is totally dry.
