About

At Little White Goat Cheese, we are redefining what artisan goat cheese can be. Based in beautiful Wamuran, Queensland, Australia, we are the creators of the world’s first freeze-dried goat feta — a gourmet innovation that combines incredible flavour, long shelf life, convenience, and true artisan quality in one remarkable product.
Founded by Australian cheesemaker and dairy goat farmer Karen Lindsay, Little White Goat Cheese was built on a passion for exceptional food, sustainable farming, and animal welfare. With more than 18 years of cheesemaking experience, Karen has developed a unique approach that places the wellbeing of the goats at the heart of the business. Unlike many commercial dairy operations, the young kids are not separated from their mothers. The philosophy is simple — happy goats produce the very best milk, and the very best milk creates extraordinary cheese.
Little White Goat Cheese first became known for its delicious fresh Persian Goat Feta, loved by chefs, food lovers, and market customers for its creamy texture and distinctive flavour. But it was innovation during challenging times that led to something truly groundbreaking — the creation of a freeze-dried goat feta unlike anything else in the world.
This revolutionary product has an impressive ambient shelf life of approximately 18 months, making it ideal for home pantries, gourmet cooking, luxury travel, camping, hiking, emergency food storage, restaurant kitchens, yacht provisioning, and export markets across the globe. Lightweight yet packed with flavour and nutrition, the freeze-dried goat feta delivers the rich tangy taste of artisan goat cheese in an entirely new way.
The product’s versatility has created growing demand across Australia and internationally, including interest from Asia and the Middle East. It can be crumbled over pizza, pasta, salads, soups, eggs, roasted vegetables, avocado, and gourmet dishes, or blended through sauces and dips for a powerful burst of flavour. It is equally at home in high-end hospitality venues as it is in a backpack on an outdoor adventure.
Little White Goat Cheese gained national attention after Karen was selected from thousands of applicants to appear on the television series Gordon Ramsay's Food Stars, where her innovation, determination, and unique product stood out in the competitive food industry.
Beyond cheesemaking, the business is deeply committed to sustainability and reducing food waste. Through freeze-drying technology, Little White Goat Cheese sees enormous potential to preserve nutritious foods for remote communities, disaster relief, hospitals, aged care facilities, and global food distribution while minimising waste.
Today, Little White Goat Cheese continues to push boundaries in artisan food production while staying true to its small-business roots, handcrafted quality, and ethical farming practices. The business represents Australian innovation, resilience, creativity, and a genuine love of producing exceptio
