The endowment was started in 2012 after the passing of Daphne Zepos, a beloved member and educator in the American cheese community.  She founded this scholarship shortly before her death to help grow a squad of educators to help fill the gap between the growing number of cheeses being available and made in the US, the growing number of shops opening up to sell the cheese, and the lack of qualified professionals to sell the product.  The scholarship gives young cheese professionals the opportunity to choose a subject, travel to learn about it hands-on in Europe, and then come back to the United States to present and teach their findings to the community.
