Kachka

Kachka is a culinary destination in Portland, Ore., encompassing a restaurant (Kachka), market (Kachka Lavka), cocktail bar (Kachka Fabrika), vodka distillery (Kachka Spirits), and dumpling brand (Kachka Dumplings) founded by Bonnie and Israel Morales. The food and drink created and served at Kachka is inspired by the foodways across the former Soviet Republics, interpreted through the ingredients grown in the Pacific Northwest. James Beard Award-nominated Executive Chef/Co-Owner Bonnie Morales and her team create dishes informed by her heritage as a first-generation daughter of Jewish immigrants from the former U.S.S.R., and staff travels elsewhere in the region. This distinctive cuisine is served with warm hospitality in an immersive atmosphere. Kachka has been lauded multiple times by The New York Times, Bon Appetit, Food & Wine and more, and was named one of Eater’s “Essential” restaurants in America. Kachka was featured in the Netflix series “Somebody Feed Phil,” and was the subject of an episode of  the Emmy award-winning docuseries “The Migrant Kitchen.” In 2022 Kachka created a groundbreaking Wage Equity Program to eliminate tips and ensure sustainable living wages and growth opportunities for all staff, which shifted the way the restaurant industry does business.
