For over 65 years AMSA has been internationally recognized as the leading source of science-based information on the efficient production of safe, high quality meat products. AMSA has an international membership of 2000 scientists and technicians in industry, government and academia. The association produces the annual Reciprocal Meat Conference and publishes a number of titles including the Meat Evaluation Handbook and the Meat Processing Manual.

Student programs are also a core part of AMSA's portfolio. The student leadership development efforts include the meat judigng program and leadership symposia.

AMSA is a member of the Council of Agricultural Science and Technology and periodically hosts the International Congress of Meat Science and Technology.
