Ruby Tequila’s Mexican Kitchen is a chain of restaurants in Texas, with five locations in Amarillo, Lubbock and Houston. Founded in 1991, Ruby Tequila’s specializes in made-from-scratch, authentic Mexican cuisine including tacos, fajitas, enchiladas, burritos and other traditional favorites. By guaranteeing the use of fresh ingredients, the restaurant does not use microwaves in their kitchen and offers made-from-scratch combinations, freshly marinated meats and salad dressings made in-house.
