Using only pure whole milk high in natural protein and fat, Maplebrook crafts authentic Italian and Mediterranean cheeses in Vermont with traditional, old-world methods. Our cheeses match the flavor and quality found in imported varieties, but offer the benefits of production close to home. Cheeses are crafted daily by hand in small batches for maximum freshness and flavor. Specialties include hand-stretched mozzarella, cherry wood smoked mozzarella, whole milk ricotta and feta, and our new Puglian burrata.
